Quick And Easy Recipe For Summer Coolers!

Last Summer I shared to you about one of the Quick and Easy Recipes to make for a summer cooler, the Green Mango Shake.

This year, I have another recipe to share which kids will surely love! This recipe is a known tropical summer cooler, but many families love preparing this anytime of the year for different occasions such as birthdays, family gatherings, kid’s party, Christmas, New Year, or even just on a regular day, and for no reason at all. The recipes is called Buko Pandan Juice and Salad. I personally love this one!

Aside from the fact that it is a recipe that the kids would love and enjoy because of it’s great aroma and refreshing taste, it also has some medicinal and nutritional value which is beneficial for the whole family. While Buko or coconut is known as a fruit from the so-called tree of life, for its variety of nutritional and medicinal properties, Pandan also has its special medicinal value. For the benefit of those who do not know, Pandan is said to be good for those who have diabetes, and the leaves are often used for treating certain skin problems. Amazing, right?

Anyway, here’s the quick and easy Buko Pandan Juice and Salad Recipe that your whole family would surely love!

For Your Buko Pandan Juice, you simply need unflavored gelatin, because we will be using pandan flavor for the gelatin. My Abuela has a lot of pandan plants in out garden, that’s why it’s easy for us to get one. But just in case you do not know what Pandan leaves are, they are called screwpine leaves in English. I’m not quite sure if it’s only available in tropical places.

You just bring water into boil, then add the leaves, plus add sugar, just enough to give it a light sweet taste… then strain it, then add the gelatin and stir until the whole gelatin is mixed thoroughly with the pandan flavored water, until there are no more lumpy texture, and the gelatin mixture is ready to be poured into a pan, or any container that will make it faster for the gelatin mixture to cool and set.

That is the traditional way to do it, but just in case Pandan leaves are not available in your place, perhaps you can just buy a pandan flavored gelatin. Just follow the gelatin recipe, and set it aside until it sets, the fastest way to do this is to place it in a cold place like a refrigerator or freezer.

When the pandan-flavored gelatin is ready, slice it into small cubes or strips, and place in juice pitcher. Simply add some fresh coconut water (buko juice), into the pandan flavored gelatin, and also add some fresh strips of young buko meat. Just add condensed and evaporated milk, plus you can add all purpose cream to make it creamier. Add icecubes, then serve cold.

You can also add some Sago or Tapioca, to make it even more interesting for the young ones.

For the Buko Pandan Salad recipe, just follow all the instructions above, and eliminate the fresh coconut water (buko juice). Add more cream, and maybe more condensed milk, depending on how sweet you want it to be, then place in the fridge until cool.
